Our story
the same passion, for four generations
In Acqui Terme, four generations ago, the Merlo family began their journey into the world of cheese: buying, selling, and aging.
In the 1950s, Francesco and Mario took the final step and founded the family’s first dairy.
Today, in Bosia, in the heart of the Langhe, just a few kilometers from Alba, Barolo, and Barbaresco, that story continues.
Caseificio dell’Alta Langa produces and ages more than thirty mixed milk and pure goat cheeses, recognized in sixteen countries worldwide.
Same values, new hands: Nicola, Diego, Gianni, and Elia carry on a tradition that no generation has ever wanted to break.
A detail to discover
Our logo is not just a landscape: it is a map. The lines dividing the hills follow the actual geometry of the Alta Langa, where hazelnut groves, vineyards, and woods alternate in an almost perfect natural design. We wanted the logo to tell this very story: the elegant order in which the heritage divides itself, long before anyone drew it.

Soft-ripened cow milk, sheep milk, and cream Robiola, with an unmistakable square shape and a light white bloomy rind.
Bosina expresses the delicate creaminess of mixed milk, with aromas of fresh butter, hay, and a touch of undergrowth that surprises the palate.
